Arugula Peach Salad

Arugula Peach Salad

A new twist on a classic side salad with luscious peaches standing in for tomatoes. Tossed in a creamy Homemade Chive Vinaigrette.

Ingredients:

  • 2 large ripe Peaches

  • 2 tablespoons Fresh Lemon Juice, divided

  • 6 tablespoons Extra-Virgin Olive Oil

  • 1 1/2 tablespoons Whipping Cream

  • 1/3 cup finely chopped Fresh Chives

  • 12 cups Arugula (about 6 ounces)

    Directions:

    Wash your peaches, rubbing them to remove any fuzz. Cut them in half and remove the pits. Next thinly slice the peaches and place them in large bowl. Add 1/2 tablespoon lemon juice; toss to keep them fresh.

    Vinaigrette:

    Whisk the other 1 1/2 tablespoons of lemon juice and the olive oil in small bowl. Now add the cream, then chives and whisk again.

    Season with salt and pepper. Add arugula to bowl with peaches. Add dressing and toss. Season with more salt and pepper, if desired, and serve.

    You could top this with your favorite nuts like slivered almonds or walnuts. In my photo I used sunflower seeds and a Gorgonzola cheese crumbled on top. Also if you don’t have Arugula, Spinach works just as well.
