Arugula Pesto

Arugula Pesto Recipe

Ingredients:

  • 1 clove garlic
  • ½ cup pine nuts
  • 4 cups arugula leaves
  • ¼ cup parmesan cheese
  • ¼ teaspoon salt
  • lemon juice
  • ¼ cup olive oil
Directions:

To make the pesto combine the garlic, pine nuts, arugula, parmesan, salt, and lemon juice in a food processor. Pulse a few times, and then begin to drizzle the olive oil into the mixture while continuing to pulse until the pesto is smooth. Adjust to your taste if needed with more salt or lemon juice.

You can easily adjust the amounts in this recipe to make more or less amount for the dish you are making. This can be made ahead and covered and let stand up to two hours at room temperature. It will keep 1 day in the refrigerator but bring it to room temperature before serving.
