Beet Salad Recipe

Beet Salad Recipe

What do you do with a Beet, an Apple and an Onion? Make a gorgeous salad of course.

DRESSING:

  • 1/2 White Onion (fine chop)

  • 3 tablespoons Apple Juice (or juiced apples)

  • 3 tablespoons Apple Cider Vinegar or white wine vinegar

  • 1T Anise Extract

  • 3 tablespoons Honey

  • Salt & Pepper to taste

    SALAD:

  • 1 Raw Beet (julienne or a fine chop)

  • Frisee Lettuce or mixed greens(bite size)

  • 1 Apple (cored, halved and cut into bite size pieces)

  • 1 Sprig Tarragon (or to your taste)

  • Handful of Walnuts

  • Sprinkle of Gorgonzola Cheese (optional)

  • (Lemon juice to prevent browning on apples, if holding)

    PREPARATION:

    Dressing:

    Add honey to cider vinegar in a bowl, let sit for a minute. Then add the anise extract, whisk or stir. Add apple juice.

    Salad:

    Mix beets, apples, onion, toss with dressing and serve on top of your lettuce. Garnish with tarragon, walnuts or Gorgonzola cheese.

    Salt and pepper to taste

    This recipe is easily doubled. Adjust the dressing to your taste, more or less of any ingredient, or eliminate the anise if it not something you like.

    I think this would make a nice holiday side recipe, perhaps Thanksgiving or Christmas because of the availability of the items and the colorfulness of the dish. A simple Red Beet, an Appple and a Onion.
