Best Salad Dressing RecipesFruit-Salad Dressing In a double boiler, combine 3 tablespoons sugar, 1 tablespoon flour, ¼ teaspoon dry mustard, ¼ teaspoon salt, 1/8 teaspoon paprika. Slowly add ½ cup fresh lemon juice. Cook over hot water, stirring, until slightly thickened. Stir in 1 tablespoon of butter or salad oil, and 2 sieved hard cooked egg yolks. Refrigerate. Makes ½ cup. Lime-Mint Fruit Salad Dressing In a small bowl, with spoon, combine 1 3-oz package of soft cream cheese, 2 tablespoons of honey, and ½ cup mayonnaise until smooth. Fold in ½ cup heavy cream, whipped; 1/8 teaspoon salt; 3 tablespoons lime juice; 2 tablespoons snipped mint. Serve this dressing over chilled canned pineapple slices in lettuce cups. Lemon-Caraway Dressing Combine all of these ingredients in a jar with a tight fitting lid. Shake well, covered; refrigerate. Shake well again before using. ¾ teaspoons saltSpeck of pepper¼ teaspoon paprika1/8 teaspoon onion salt¼ teaspoon sugar¼ cup fresh, frozen, or bottled lemon juice<¾ cup salad oil½ teaspoon caraway seedsCoffee-Fruit Dressing 1/1/2 teaspoon instant coffee½ teaspoons dry mustard½ teaspoon salt1/4 cup melted butter or margarine2/3 cup sweetened condensed milk¼ cup fresh, frozen, or bottled lemon juice1/3 cup canned pineapple juice1 egg yolkBlend together coffee, mustard, salt; stir into butter. Combine milk, juices, and egg yolk; stir in butter mixture. Beat until thickened. If thicker consistency is desired, refrigerate before serving. ”Sundae Salad Dressing” ¾ cup chilled, drained canned fruit cocktail (or coarsely diced fresh or canned peaches)1 banana, coarsely diced½ cup mayonnaiseShortly before serving, mix ingredients. Jersey Dressing Combine 1 can condensed tomato soup, undiluted; 1 cup mayonnaise; ¼ cup pickle relish; 1 chopped, hard-cooked egg; ½ teaspoon grated onion; ½ teaspoon prepared mustard; 1 tablespoon lemon juice. Toss cooked lobster meat with this dressing. ”Ice Cream” Salad 1 lb. Cottage cheese6 to 8 radishes, diced¼ cup chopped walnuts“Sundae” Salad Dressing (recipe above)If the cottage cheese is quite moist, drain off excess liquid. Add radishes and walnuts. Chill well in refrigerator, or in freezing compartment. (Do not freeze mixture solid.) At serving time, heap cheese mixture roughly into balls on shredded lettuce; top generously with “Sundae” Salad Dressing.Makes about 4 servings.
