Cold Pasta Salad Recipes

These simple mouth-watering Cold Pasta Salad Recipes are certain to make any family meal memorable.

Cold Italian Pasta Salad

Ingredients:

  • 1/2 pound Creamettes Rainbow Rotini
  • 1 Large can unseasoned artichokes
  • 1 (5 oz.) Pepperoni stick, sliced (optional)
  • 1 cup cauliflower – tiny flowerets
  • 1 cup broccoli – tiny flowerets
  • 1 cup diced Monterey Jack cheese
  • 1 medium carrot, grated
  • 3 green onions, sliced
  • 1 cup Italian dressing

    Directions:

    Prepare the Rotini as directed on the package, drain. Add the remaining ingredients.Cover and chill. This is a super fast recipe that works great for many occasions.

    Gayle’s Macaroni Salad Recipe

    Ingredient:

  • 2 cups cooked macaroni ( sea shells)
  • 2 hard cooked eggs
  • 1/4 cup celery – diced
  • 1/4 cup Colby cheese – cubed
  • 1/4 cup sweet pickles – diced
  • 1 tablespoon minced onion
  • 1/2 teaspoon salt

    Directions:

    Mix in Mayonnaise or Hellman’s salad dressing till creamy about ½ cup. Or more if you like it creamier.

    Serve chilled.

    Optional ingredients are chopped stuffed olives and chopped green pepper.

    Spaghetti Salad

    Ingredients:

  • 1 pound box spaghetti, broken into 3 inch pieces
  • 1 onion, while or yellow
  • 1 green pepper, chopped
  • 1 tomato, chopped
  • 1 8 oz. Bottle of Catalina Salad Dressing
  • 1 8 oz. Bottle of Italian Salad Dressing
  • 1 bottle McCormick Salad Dressing Seasoning Supreme (yellow lid)
  • 1/2 jar McCormick Salad Topping

    Directions:

    Cook the spaghetti according to the package. Drain well. Add the remaining ingredients and stir to incorporate.

    This is a good recipe to make a day ahead so the flavors all get infused into the spaghetti.

    Marie’s Macaroni Salad

    Ingredients:

  • 1/2 pound elbow macaroni
  • 1 teaspoon salt
  • 4 cups boiling water

    Cook macaroni in boiling, salted water until all the water is absorbed and macaroni is tender, but a little chewy in consistency. Stir frequently to keep from sticking to the pan.Cool and chill.

  • 1/2 cup small cubes of cheese or cold meat
  • 1 cup diced celery
  • 2 hard cooked eggs
  • 1 tablespoon minced pimento
  • 1 tablespoon minced onion
  • 1 tablespoon minced green pepper
  • salt and pepper to taste

    Mix these ingredients with your favorite dressing. Serves 8 to 10 people.
