Mashed Potato Salad


Mashed Potato Salad

Two versions, choose your favorite.

Ingredients:

  • 6 large potatoes, quartered
  • 1 1/2 cups coleslaw dressing
  • 1/2 cup mayonnaise
  • 2 hard boiled eggs, chopped
  • 1/2 cup onions, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup green peppers, chopped
  • 1/2 cup carrots, chopped
  • salt and pepper to taste

    Directions:

    Boil the potatoes until tender. Mash while still warm and stir in coleslaw dressing and mayonnaise.

    Add eggs, onions, celery, peppers and carrots.

    Season to taste with salt and pepper.

    Here is a second version of this fun recipe

    Ingredients:

  • 6 medium potatoes
  • 6 eggs
  • 1 medium white onion diced
  • 2 to 3 large sweet pickles
  • 1/2 C. diced celery
  • 1 C. mayonnaise
  • 1 T. prepared mustard
  • 1/2 t. salt
  • 1/3 C. liquid from sweet pickles
  • salt and pepper to taste

    Directions:

    Peel and boil potatoes. Hard boil eggs. Dice onion, celery and pickles.

    Roughly chop the hard-boiled eggs. Reserve 1 egg for garnish. Mash potatoes while hot and add diced hard-boiled eggs, onions, celery, salt and pepper.

    Mix mayonnaise, mustard and pickle juice in separate bowl (be sure this mixture is quite thin). Pour over hot spud mixture and stir.

    Garnish with cut up egg and paprika.

    Chill until ready to serve.
