Fabulously Fun Recipes.

Ah, yes good ole summer time. Time for Picnic food ideas. We all love an old fashioned outing with our family or friends in the park. Take advantage of all the beautiful state parks across America and your own home town. Get out and enjoy the sunshine, watch the kids run and play or relax in your own backyard.

Here are some of my favorite easy picnic food ideas that I like to use for our family reunions or summer outings. How about some cold macaroni salad, a classic recipe. Cold Corn is super quick and delicious and everyone loves it.

Picnic Salad Platter

Ingredients:

  • 1/3 cup French dressing
  • 1/3 cup mayonnaise or cooked salad dressing
  • 3 cups diced, cooked potatoes
  • 4 chopped, hard-cooked eggs
  • 3 cups cottage cheese
  • 1/3 cup diced pimento
  • 1/3 cup diced green pepper
  • 3 tablespoons minced onion
  • 3 tablespoons snipped parsley
  • 2 teaspoons salt
  • Crisp greens
  • Radish roses
  • Ripe olives
  • Ready-to-eat smoked beef tongue, or cooked or canned tongue. Or sliced summer sausage.

    Several hours ahead: Blend French dressing with mayonnaise. Add potatoes and eggs; let stand 10 to 15 minutes. Now add cheese, pimento, green pepper, onion, parsley and salt; mix gently but toughly. Lightly oil 1 ½ quart ring mold; pack salad into mold. Refrigerate.

    At serving time: Run small spatula around sides of mold. Firmly shake mold back and forth to loosen salad. Then invert plate over mold, and turn out salad. Garnish salad with greens. Fill center with radish roses and ripe olives. Surround with sliced tongue or summer sausage.

    Makes about eight servings.

    For a crowd: Make as many times recipe as needed. Refrigerate in bowl. To serve, spoon into a ring shape on plate; then garnish.

    Creamy French Dressing

    Ingredients:

  • ½ cup undiluted evaporated milk
  • ½ cup salad oil
  • ¼ cup vinegar
  • ½ teasp. Sugar
  • ½ teasp. Dry mustard
  • ½ teasp. Salt
  • 1/8 teasp. Pepper
  • 1/8 teasp. Worcestershire
  • 1/8 teasp. Liquid hot pepper seasoning(optional)
  • 1 egg white, unbeaten

    Directions:

    Combine all ingredients in a jar, bottle, or bowl. Shake or beat till blended; or use electric blender; refrigerate. Shake well before using.
