Sauerkraut Salad



Sauerkraut Salad

This is an old fashioned recipe I came across in a mother - daughter salad supper church cookbook. I decided to try it and I’m glad I did. It’s wonderfully sweet and delicious. I served this as a side salad but I thought it would also be fabulous on top of brats instead of a relish. I’m going to try that too.

Ingredients:

  • 1 Large can or bag of Sauerkraut, rinsed and drained
  • 1 Medium Onion, chopped
  • 1 Cup Celery, chopped
  • 1 Large Green Pepper, chopped
  • ½ cup White Vinegar
  • 1 Cup Sugar

    Directions:

    Prepare your vegetables (chopping). Rinse the sauerkraut and drain. I like to smoosh it down a bit when draining to make sure and remove the excess water .

    Heat the vinegar and sugar until the sugar is dissolved. Cool this down a bit and then add it to your chopped vegetables. Mix in the sauerkraut.

    It’s best if this is refrigerated for a few hours before serving .
