3/4 cup fresh grapefruit sections, halved
Directions:
Dissolve gelatin, ginger, and salt in boiling water. Add ginger ale. Place a small bowl with 1 cup of the gelatin in larger bowl of ice and water, stir until slightly thickened.
Then whip it with an electric mixer or rotary beater until mixture is fluffy and thick and about double in volume. Pour into an 8-inch square pan. Chill until set, but not firm.
Chill remaining gelatin until thickened. Fold in orange and grapefruit sections. Spoon gently over set gelatin in the square pan. Chill until firm-about 4 hours.
Cut into squares. Serve with crisp greens. Makes about 4 cups or 6 to 8 servings.
Note:
When chilling gelatin mixture in an ice bath, stir occasionally to insure even thickening.
