Ambrosia Salad Recipe

Sparkling fresh flavored ambrosia fruit salad recipe, teamed with pork roast, ham, and fried chicken, make homey meal that is hard to beat. A fruit dinner salad - simple as this winter salads citrus mixed with mini marshmallows; designed to go with the meat-and-vegetable course. But can double as dessert, appetizer, or even a centerpiece. I have included several variations to suit most any palette. And an alternative mandarin orange salad that is so simple the young chef in your family can make it.

Ingredients:

  • 1 (11 ounce) can mandarin oranges, drained
  • 1 (8 ounce) can pineapple tidbits, drained
  • 1 cup miniature marshmallows
  • 1 cup flaked coconut
  • 1 cup sour cream

    Directions:In a large bowl, combine the oranges, pineapple, marshmallows and coconut. Add sour cream and toss to mix. Cover and refrigerate for several hours.

    This maybe just what you are looking for if you don't want a "too sweet" Ambrosia Salad Recipe with marshmallows. If you miss some of the creaminess of Ambrosia's with cool whip, add about 1/2 cup of cool whip. But if the fruit in this version is sweet enough for you, enjoy this as a lighter version instead of the cool whip ambrosia with marshmallows.

    You can always layer the top with coconut instead of mixing it in, then decorated the top with maraschino cherries. It looks great in a big glass bowl.

    ******Here is a very different version to try******

    Fluffy Ambrosia Salad

    Ingredients:

  • 1/3 cup evaporated milk
  • 2 tablespoons mayonnaise or cooked salad dressing
  • 4 teaspoons fresh, or bottled lemon juice
  • 1/4 teaspoon granulated sugar
  • 32 miniature marshmallows
  • 1 tablespoon lemon juice
  • lettuce
  • 1 large can pear halves or other fruit, drained
  • 1/3 cup flaked coconut

    Directions:

    Refrigerate evaporated milk in a bowl till ice cold. Meanwhile, mix together mayonnaise, 4 teaspoons lemon juice, salt, and sugar; fold in marshmallows; refrigerate about one hour, stirring 2 or 3 times.

    To serve, whip milk with chilled beater; stir in 1 tablespoon lemon juice; fold into your mayonnaise dressing. Arrange lettuce on salad plates; top with pears; sprinkle with coconut; spoon on marshmallow dressing.

    *****A simple Orange Salad Recipe******

    Ingredients:

  • 1 box Vanilla Pudding
  • 1 Box Vanilla Tapioca Pudding
  • 1 box Orange Jell-O
  • 3 Cups water

    Directions:

    Cook the above ingredients until thickened. It will not get as thick as pudding. Cool the above and then add:

  • 1 Can Mandarin Oranges
  • 1 Cup Cool Whip
