Black Eyed Pea Salad

Avocados are very healthy and I have read they help regulate your blood sugar levels so besides being a really tasty recipe this is a good recipe for people with Diabetes as well.

The peas are a good source of magnesium, iron and protein. Make sure and check your label for the nutritional facts. Black-eyed peas are also called cow peas.

Ingredient:

  • 2 cans (15 ounces each) black-eyed-peas preferably with no salt. Drained and rinsed
  • 1 avocado, halved, pitted, peeled, and diced
  • 2 scallions, thinly sliced
  • fresh parsley, chopped
  • fresh lime juice
  • salt and pepper


    Directions:

    In a medium bowl combine all your ingredients and mix well. Season this salad with salt and pepper.
