Cold Corn Salad

Cold Corn Salad

Ingredients:

  • 1 (10 ounce) package frozen whole-kernel corn, thawed
  • 1/4 cup diced yellow bell pepper
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green bell pepper
  • 1/2 white onion, chopped
  • 1/2 cup zesty Italian salad dressing
Directions:

In a large bowl, mix together the corn, yellow pepper, red pepper, green pepper, white onion, and dressing. Adjust the amount of dressing to your liking. Chill until serving.

You can buy this mix frozen so you don’t even have to cut the vegetables, I used a bag of frozen roasted corn, onion and mixed peppers and black beans for the salad pictured.I’ve seen recipes with mayo in them for this salad but I like it this way. You can also add avocado, cherry tomatoes and basil if you want. If you don’t have the salad dressing on hand you can make it. Check the dressing section of this website for Italian salad dressing.
