Cucumber and Onion Salad

Cucumber and Onion Salad

  • 1/3 cup sugar
  • 1/3 cup water
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon cooking sherry

    Slice your onions and cucumbers. They can be thick or thin however you like them.

    Mix your brine, stirring well to dissolve the sugar. Some people heat this mixture to make sure the sugar is dissolved. I just stir it with a spoon because it will marinate anyway and the sugar will completely dissolve.

    Refrigerate for at least 3 hours. These are a bit sweeter than some recipes and to good to stop eating. You might find yourself adding another cucumber to the brine after the first batch has been devoured.

    Optional creamed version, let marinated for 2 hours, drain off liquid and stir in 1 1/2 cup of sour cream. Top with cracked black pepper.

    My grandmother used to make this when I was a child. These are my versions of it.

    Makes a wonderful side dish or picnik recipe.
