Easy Chicken Salad Recipe For:

Apricot Almond Chicken Salad

Ingredients:

  • 2 cups cooked chicken breast
  • 1 stalk celery
  • 8-10 dried apricots
  • 1/4 cup chopped nuts
  • 1/3 cup mayonnaise
  • 5 teaspoons white wine vinegar
  • 1 teaspoon cooking wine or your favorite white wine
  • 1 teaspoon minced garlic
  • basil leaf or parsley or cilantro

    Directions:

    I used a store bought pre-cooked chicken breast strips and just put a rough chop on the chicken. Mix the mayo, vinegar, garlic and wine till blended well.

    Chop the nuts in a mini chopper, it makes really quick work of it, the original recipe used almonds but I had a fresh can of mixed nuts so I just used those. Dump the nuts in with your dressing mixture. Now use your mini chopper to chop the celery and apricots, I chopped these together, the moisture in in celery helped easily chop the apricots. Then add them to your mayo mixture.

    Add your chicken and mix toughly to distribute the dressing. Salt and pepper to taste.I served this on honey whole grain bread and added a sprinkle of cilantro and curly parsley. But a basil leaf would also be great.

    Country Chicken Salad Recipe

    Ingredients:

  • 6 cups cooked or canned chicken, turkey, or duck, in large pieces
  • 4 cups celery, sliced at an angle
  • ¼ cup French dressing
  • ½ cup mayonnaise
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoons lemon juice

    Directions:

    About 1 hour before serving: Toss all ingredients together; refrigerate until ready to serve. Serve on lettuce with fresh cherry garnish, or with olives, carrot curls, or radishes.

    Makes about 8 servings.

    Add Nuts!

    Substitute ½ cup of sliced olives and the ½ cup toasted slivered almonds or walnuts for the 1 cup of celery.

    *Note:This recipe can be easily converted to Tuna Salad by replacing the chicken with tuna.
    Rough chop the chicken.


    Mix the other ingredients.
