Greek Salad RecipeIngredients: 2 medium vine-ripened tomatoes, cut into 1 1⁄2" pieces 1 small cucumber, sliced very thin 1⁄2 medium white onion, thinly sliced 3 tbsp. extra-virgin olive oil 1 tbsp. red wine vinegar 1⁄8 tsp. dried oreganoSea Salt or Kosher SaltFreshly ground black pepper6 oz. feta, cut into thick slabs 8 kalamata olives Directions: Prepare your vegetables (slicing). Combine cucumbers, tomatoes and onions in a bowl.In a small bowl, whisk together oil, vinegar, and oregano, salt and pepper; pour over cucumber mixture. Toss. Transfer salad to a serving bowl or plate and top with feta and olives. Garnish with more oregano; season with pepper. This salad is so easy and delicious you will want seconds. It would make a great picnic salad or quick lunch. SERVES 2 Absolutely Fabulous Greek-House Dressing Ingredients: 1 1/2 quarts olive oil 1/3 cup garlic powder 1/3 cup dried oregano 1/3 cup dried basil 1/4 cup pepper 1/4 cup salt 1/4 cup onion powder 1/4 cup Dijon-style mustard 2 quarts red wine vinegar Directions: In a very large container, mix together the olive oil, garlic powder, oregano, basil, pepper, salt, onion powder, and Dijon-style mustard. Pour in the vinegar, and mix vigorously until well blended. Store tightly covered at room temperature.
