Greek Salad Recipe

Ingredients:

  • 2 medium vine-ripened tomatoes, cut into 1 1⁄2" pieces
  • 1 small cucumber, sliced very thin
  • 1⁄2 medium white onion, thinly sliced
  • 3 tbsp. extra-virgin olive oil
  • 1 tbsp. red wine vinegar
  • 1⁄8 tsp. dried oregano
  • Sea Salt or Kosher Salt
  • Freshly ground black pepper
  • 6 oz. feta, cut into thick slabs
  • 8 kalamata olives

    Directions:

    Prepare your vegetables (slicing). Combine cucumbers, tomatoes and onions in a bowl.In a small bowl, whisk together oil, vinegar, and oregano, salt and pepper; pour over cucumber mixture. Toss. Transfer salad to a serving bowl or plate and top with feta and olives. Garnish with more oregano; season with pepper.

    This salad is so easy and delicious you will want seconds. It would make a great picnic salad or quick lunch.

    SERVES 2

    Absolutely Fabulous Greek-House Dressing

    Ingredients:

  • 1 1/2 quarts olive oil
  • 1/3 cup garlic powder
  • 1/3 cup dried oregano
  • 1/3 cup dried basil
  • 1/4 cup pepper
  • 1/4 cup salt
  • 1/4 cup onion powder
  • 1/4 cup Dijon-style mustard
  • 2 quarts red wine vinegar

    Directions:

    In a very large container, mix together the olive oil, garlic powder, oregano, basil, pepper, salt, onion powder, and Dijon-style mustard. Pour in the vinegar, and mix vigorously until well blended. Store tightly covered at room temperature.
