Pasta and Pesto Salad

Ingredients:

  • elbow macaroni
  • pesto

    Boil your elbow macaroni according to the package directions. Drain the macaroni. Mix with pesto. Serve warm. I used a pre-made pesto by Buitoni that I’ve used often and recommend.

    Now I know this sounds incredibly easy and well this is easy salad recipe.com but I had to put it out here because it was so darn good. Generally pesto gets used on ravioli and other grander pastas than a plain ole elbow noodle. I made this quick one day before leaving for work. It was great. So next time you have no idea what to make try this simple dish. I'm including a recipe for arugula pesto, in case your not trying to get to work and have a extra minute.

    Basil-Arugula Pesto

  • 3/4 cup extra-virgin olive oil
  • 3 cups (loosely packed) fresh basil leaves
  • 1 cup (loosely packed) fresh arugula
  • 2 garlic cloves, peeled
  • 1/2 teaspoon grated lemon peel
  • 2 tablespoons lukewarm water

    Place 1/2 cup oil and next 6 ingredients in processor. Process to thick paste. With motor running, add remaining 1/4 cup oil and 2 tablespoons water to processor. Blend until smooth. Season pesto to taste with salt and pepper. Pour thin layer of oil over pesto; cover and chill. This can be made 2 days ahead.
