Pearl Onion And Asparagus Salad

Ingredients:

  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon red wine vinegar
  • 1 table spoon olive oil
  • 10 oz package frozen pearl onions
  • 10 oz package frozen asparagus

    Directions:

    Steam vegetables till tender 7-8 minutes. Marinate in sauce. Serve as a side salad.

    This is so simple when you use frozen vegetables. I generally buy Birds Eye frozen vegetables because they are not soggy and they retain their super rich colors in the food. In my area they are about one dollar for a 10 oz package. Great to keep on hand and serves two people a generous serving.

    Just a note on asparagus, it is a nutrient-dense food which in high in Folic Acid and is a good source of potassium, fiber, vitamin B6, vitamins A and C, and thiamin. It has No Fat, contains No Cholesterol and is low in Sodium.
