Simple Chicken Salad Recipe
This recipe is low in carbohydrates, high in protein and only has 3 grams of saturated fat serving. You can place it onto of lettuce or wrap it in a tortilla. This Southwest Crunchy Chicken Salad Recipe makes a wonderful and satisfying picnic salad in the summertime too.
Ingredients
1 1/3 cups fat-free mayonnaise
1/2 cup minced fresh cilantro
1/4 cup lime juice (really gives a fresh flavor to it)
1/4 cup orange juice
2 garlic cloves, minced
1 3/4 teaspoons ground cumin
3/4 teaspoon grated orange peel
1/2 teaspoon salt
9 cups cubed cooked chicken breast
1 3/4 cups julienne peeled jiicama (white radish)
1 3/4 cups chopped celery
1 3/4 cups sweet red pepper
1 cup chopped cashews
1/2 pound turkey bacon strips, cooked, diced, drained
Directions
In a small bow, combine the first eight ingredients. In a large bowl, combine the remaining ingredients. Add the3 mayonnaise mixture; toss to coat. Chill until serving.
It only takes about 30 minutes to whip up the fresh easy salad recipe and it will serve 13 people...well not in my house cause we are eaters!
